I read in far fewer fandoms than I write in. This is partly because when I write I'm generally interested in specific characters and what makes them tick - either within a relationship or as individuals. Which often means I'm looking for my own take on a scene and not someone else's. Also, in small fandoms, the chances are my pairings will be different from other writers.
I read a fair amount of Sherlock Holmes, both BBC and ACD. I tend to avoid John/Sherlock in BBC, but read Holmes/Watson in ACD. Having said that I have a number of friends who write John/Sherlock and I do read their fics, since their stories are entertaining. I read Sherlock/Lestrade, John/Lestrade, Sherlock/Victor Trevor and Sherlock/Stanley Hopkins (I would read more of the last pairing if I hadn't written over half of it).
I still read Lewis fics, although they need to have plot to them and not just be a vehicle to bring Lewis and Hathaway together. I read Lucas North in Spooks, and Guy of Gisborne in Robin Hood (but no Marion). That sums up the fics I look for regularly and have favourited on AO3.
I like fluff and happily read all The Hobbit fluff that alkjira posts to AO3. Otherwise, there are certain authors I will read, almost regardless of fandom, because I like their characterisation and the way they structure their stories. I'm not prescriptive, and will happily try anything recommended by friends.
