1. If you could design your life exactly how you'd like, how famous would you be?
Not at all.  I will be a Mycroft Holmes, unseen in the background

2. How often would you travel?
There are lots of places I'd like to visit, but the actual travelling is a bore.

3. How many people would live with you?
SM and I have been married for 40 years, so he might as well stay.

4. How often would you eat out at restaurants?
Occasionally, for celebrations, trying out new cuisine, meeting the daughter. 

5. What new hobby would you get into?
I'd like to do more sketching and painting, but even though I'm now retired there just isn't the time to do all the things!  (Because if I had more time I'd stitch, knit and read more as well...)

My answers would be very similar to yours (except for No. 3 upon which I cannot have an opinion!). What we need is access to various pocket dimensions: a writing dimension, a reading dimension, a knitting dimension and so on. Hopefully, someone is working on this.
